Here is a great recipe from one of our farmers' market customers:

Matsutake Rice

2 cups of rice
2 ½ cups of water
3 tablespoons or Japanese soup base (soy sauce flavor)
4 ounces of Matsutake
1. Rinse the rice and soak in 2 ½ cups of water for 30 minutes.
2. Remove dirt from matsutake and slice lengthwise.
3. Blend all ingredients except for matsutake and cook rice. Follow instructions for rice cooker or bring to boil over high heat, reduce heat, cover pan and simmer for 25 minutes.
4. Mix matsutake into cooked rice and let it stand for 10 minutes. This steams the matsutake, releasing the flavor.

There are many variations on this basic recipe. Try adding chicken.

Matsutake is prepared with tempura, sukiyaki and Japanese Clear Soup.
