Oregon White Truffles
"Oregon White Truffles"
are actually several varieties and species of the genus Tuber. TruffleZone
offers Fall Oregon White Truffles from November to January. Spring Oregon White
Truffles fruit less reliably and are sometimes available March through
May.
The Oregon White Truffle species that fruits most
heavily in winter has been called Tuber gibbosum was renamed Tuber gibbosum var.
autumnale and finally have been named Tuber oregonense. The original collection of T. gibbosum has been examined by Dr. James Trappe,
an Oregon State University professor and a leading authority on truffles, to determine the exact name of the truffle in question. The original Tuber
gibbosum was collected in the spring on the central California Coast. These
appear
to be our
spring species which has been called Tuber gigantum for the past couple of
decades. As a result of Dr. Trappe's work, these have just been renamed as Tuber gibbosum.
Ripe Spring Oregon White Truffles
There are several other species of the genus Tuber that are found in
the Pacific Northwest that are of culinary interest but they do not
usually fruit in large quantities.
