Frozen TrufflesSometimes during truffle season the truffle collectors gather more truffles than they are able to sell on the fresh market or they gather some truffles that are a bit smaller than the chefs normally use. These truffles are individually quick frozen and will retain their pungent aroma for up to a year if handled correctly. While the flavor is slightly diminished from the fresh state, it is unique and makes a wonderful addition to many foods. The rule of thumb with frozen truffles is to use a few more in a dish than you would fresh truffles. Frozen Oregon White Truffles complement egg and meat dishes wonderfully. Oregon Black Truffles keep very well frozen. The Oregon White Truffles retain much of their flavor when frozen but the texture changes dramatically. It is suggested that frozen Oregon White Truffles be incorporated into a compound butter which retains the flavor of the truffles very well even after extended time in the freezer. Compound Truffle Butter Mix 1 ounce cleaned Oregon White Truffles and one-half pound of room-temperature good quality butter, let stand over night. Serve on bagels, potatoes, pasta, vegetables or meat. Any that is not consumed within three days should be frozen in portion-sized packages for later use. TruffleZone Frozen Oregon White Truffle Tapenade 1.5 cups Frozen Oregon White Truffles Allow the frozen truffles to thaw. Combine ingredients in food processor or blender. Process until mixed well.
