Handling Truffles

Oregon White Truffles
When fully ripe, the interior of the Oregon White Truffle is mottled brown.

Unless they are almost over-ripe in the ground, Oregon Truffles take a couple of days after leaving the truffle bed before the flavor "comes up" to exhibit their unique characteristics (How long do you think the European truffles take to get to you?).

Oregon Black Truffle 
The interior of a ripe Oregon Black Truffle is a mottled gray.

Since Trufflezone delivers truffles straight from the collectors, some of the truffles may have been gathered the day before you receive them. Do not worry if some truffles have not come up. 

Warning: Do not store truffles or any mushroom in plastic baggies as they are living things. They will rot if not allowed to transpire. Attempts to ripen unripe truffles using the plastic baggie and unbleached paper towel method result in increased product loss compared to the storage method outlined below. 

Wash or brush the truffles, select the most aromatic to use immediately and store the rest in the refrigerator in a sealed container with some type of uncooked rice until they develop their wonderful aroma. The truffles should be inspected every day and used before they get too soft. Any appearing oily should be used immediately or preserved.
